Lahmacun-Inspired Tlayuda

Warm, crisp, and layered with bold flavor, this Lahmacun-Inspired Tlayuda made with Rodriguez Bakery tortillas brings together the best of two worlds. A spiced meat topping—blending Middle Eastern and Mexican flavors—is spread over a thin, golden tortilla and baked to perfection. Served with fresh herbs, tomatoes, and a squeeze of citrus, it’s fast, flavorful, and incredibly satisfying.

Ingredients:

For the Tlayudas:

  • 6 Rodriguez Bakery flour tortillas

  • 10 oz ground lamb or beef

  • 1 small onion, finely grated

  • 2 garlic cloves, minced

  • 1 ripe tomato, grated or finely chopped

  • 1 red bell pepper, finely chopped

  • 2 tbsp tomato paste

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1 tsp red pepper flakes (optional)

  • Salt and black pepper, to taste

  • ¼ cup chopped fresh parsley

To Serve:

  • Fresh parsley or cilantro

  • Sliced tomatoes

  • Lemon or lime wedges

Instructions:

Mix the Topping:
In a bowl, combine the ground meat, onion, garlic, tomato, bell pepper, tomato paste, spices, and chopped parsley. Mix until it forms a cohesive, spreadable mixture.

Build the Tlayudas:
Preheat your oven to 450°F. Line a baking sheet with parchment paper.
Lay out the Rodriguez Bakery tortillas and spread a thin, even layer of the meat mixture onto each one, pressing gently so it adheres.

Bake to Crispiness:
Bake for 6–8 minutes, or until the tortillas are crisp at the edges and the topping is cooked through and slightly browned.

Garnish & Serve:
Top each tlayuda with fresh parsley or cilantro, sliced tomatoes, and a squeeze of lemon or lime juice.
Serve hot, folded or flat—perfect for sharing, snacking, or making dinner a little more exciting.
