Tortilla Soup

This Tortilla Soup is a rich and flavorful blend of seasoned chicken, vegetables, and crispy tortilla strips. Topped with fresh avocado, cheese, and cilantro, it makes a comforting meal that’s perfect for any day. This soup is easy to prepare and packed with bold Mexican flavors.

Ingredients:

For the Soup:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and minced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 6 cups chicken broth
  • 1 (14.5 oz) can of diced tomatoes (with juice)
  • 1 (15 oz) can of black beans, drained and rinsed
  • 1 ½ cups cooked, shredded chicken
  • 1 cup corn kernels (fresh or frozen)
  • Salt and pepper to taste
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped

For the Tortilla Strips:

  • 4 corn tortillas, cut into thin strips
  • 2 tablespoons vegetable oil
  • Salt, to taste

Garnishes:

  • Diced avocado
  • Shredded cheddar or Monterey Jack cheese
  • Sour cream
  • Fresh cilantro
  • Lime wedges

Instructions:

  1. Make the Tortilla Strips:
    Preheat the oven to 375°F (190°C). Toss the tortilla strips with vegetable oil and arrange them in a single layer on a baking sheet. Bake for 10-12 minutes, or until golden and crispy. Sprinkle with salt and set aside.

  2. Prepare the Soup Base:
    Heat olive oil in a large pot over medium heat. Add the diced onion and cook for 4-5 minutes until softened. Stir in the minced garlic and jalapeño, cooking for another minute until fragrant.

  3. Add the Spices and Liquids:
    Stir in cumin, chili powder, and smoked paprika. Cook for 1 minute, then add the chicken broth, diced tomatoes, black beans, and corn. Bring the mixture to a simmer and cook for 10 minutes.

  4. Add the Chicken:
    Stir in the shredded chicken and lime juice. Let the soup simmer for another 5 minutes to heat the chicken. Season with salt and pepper to taste.

  5. Serve the Soup:
    Ladle the soup into bowls and top with crispy tortilla strips. Add garnishes such as diced avocado, shredded cheese, a dollop of sour cream, and fresh cilantro. Serve with lime wedges for extra zest.
